Balsamic Bean Dip with Fresh Veggies

¼ cup pine nuts, (isle 1)
4 ounces hummus, (cold case front of store near deli)
6 ounces feta cheese, crumbled, (isle 11)
1/3 cup finely chopped fresh mint
3 tablespoons best quality extra-virgin olive oil, (isle 5)
Crackers, (isle 7)
Put the pine nuts in a medium skillet and cook over medium heat, shaking the pan constantly, until the nuts are golden brown (watch carefully because they burn easily). Remove from heat, and let cool completely. Spread 1 teaspoon hummus onto each cracker. Sprinkle with the feta, followed by the mint. Top with a few nuts. Drizzle with olive oil and enjoy!
